Agave potatorum, commonly known as Verschaffelt agave, is a succulent perennial native to the semi-arid highlands and rocky outcrops in Mexico, particularly from Puebla to Oaxaca. It typically grows to a height of 1-2 feet (0.3-0.6 meters) and a similar width, forming a rosette of thick, fleshy leaves that are gray-green with a spiny margin and a sharp terminal spine. The specific epithet ’potatorum’ refers to drinking and brewing, highlighting its use in the production of mezcal. When it flowers, which is rare and often after many years, it produces a tall spike with yellow blooms that are attractive to pollinators.
The Verschaffelt agave is valued in cultivation for its sculptural form and is often used as a focal point in rock gardens, xeriscapes, and as container plants. It is drought-tolerant, requiring minimal water once established, and thrives in well-draining soils. Full sun is ideal to maintain its compact form and coloration.
