Eryngium variifolium, commonly known as Moroccan Sea Holly, is an evergreen perennial herb native to the rocky and sandy soils of the Atlas Mountains in Morocco. It typically grows to a height of 1-2 feet (0.3-0.6 meters) and a width of 0.8-1 feet (0.2-0.3 meters). This plant features a rosette of variably-shaped leaves, some deeply lobed, with spiny edges and a marbled white veining that adds to its ornamental value. From mid to late summer, it produces striking blue and silver thistle-like flowers that are highly attractive to pollinators and add a unique texture to garden settings.

Moroccan Sea Holly is valued for its drought tolerance, architectural form, and the distinctive color of its flowers, which can be used as a focal point in rock gardens, coastal gardens, and borders. It is also popular for its low maintenance requirements and its ability to thrive in poor soils, provided they are well-drained. Gardeners should plant Eryngium variifolium in full sun to encourage the best flower production. While generally disease-free, it can occasionally suffer from root rot if grown in soils that retain too much moisture.
